Providing Information on the Best Pecans to Purchase

EXPERT TIP!  The best way to buy pecans is to get them directly from the grower. Pecans are harvested in the fall, and are freshest at that time. A good grower knows how to dry them to just the right moisture level. But it is critical that the buyer knows how to care for them. They should be kept refrigerated or frozen. Once frozen, they maintain their goodness for years! And it's okay to thaw and refreeze without harming them. But if you simply store them in your pantry they will become moldy and/or rancid within weeks to months.

If you find pecans at room temperature in a grocery store, they have been dried much more severely. And the taste will suffer!

So be sure to purchase "orchard-fresh" pecans. Your grower may have frozen them when they were at their peak quality, but that is just what you want. You can keep them in your freezer, and just get what you need for your recipe or your snack.
